Chef De Partie – Located in Springvale

Operating as part of the wider Melbourne Racing Club (MRC) group, Pegasus Leisure Group (PLG) has an exciting portfolio consisting of 13 hotel and club venues located across greater Melbourne.Highways located in Springvale is looking for an experienced full-time Chef De Partie to help run all aspects of Kitchen operations. We are looking for someone who can demonstrate their creative flair and passion for food, as well as being an efficient operator to assist with food preparation and service. Maintaining a safe and hygienic kitchen is a critical requirement of this role.On the doorstep of Sandown Racecourse, Highways has a large bistro to cater to families and events. The space also includes large sports bar to grab a drink, TAB open 7 days a week as well as a gaming floor to try your luck.DutiesAssist with induction of new employees when requiredMaintaining control and leadership in the kitchen during service times in allocated sectionsmaintain professional relationships with external suppliesPrepare and cook menu as per cooking guidelines and set standardswork in conjunction with the head chef to develop and implement menusensure all staff following safety proceduresSkills & ExperienceCert 3 or 4 commercial cookers or equivalentFood handlers (optional)Full working rights in AustraliaExperience working in a pub/bistro environmentWell versed in all kitchen areas with hands-on experienceExperience with kitchen operations and functions and ability to cook a broad range of food itemsAbility to work as part of a teamAbility to work in a high-stress environmentAbility to follow and give direction when requiredCOVID-19 Double Vaccination Status RequiredIn return you will receive a competitive wage, a great working environment and genuine learning and development opportunities.
