Chef De Partie – Sugar Gum Hotel

Operating as part of the wider Melbourne Racing Club (MRC) group, Pegasus Leisure Group (PLG) has an exciting portfolio consisting of 13 hotel and club venues located across greater Melbourne.The Sugar Gum Hotel located in Hillside is a PLG venue looking for an experienced casual Chef De Partie to join the team to help run all aspects of Kitchen operations. We are looking for someone who can demonstrate their creative flair and passion for food, as well as being an efficient operator to assist with food preparation and service. The venue boasts a spacious family bistro, large kids areas to keep them entertained for hours, plus a casual area referred to as 'the social' to enjoy a cocktail.What will we do for you? As an employee at PLG, you will receive a competitive wage, a supportive and safe working environment including on-site night security and convenient parking options. What will my responsibilities be?Assist with induction of new employees when requiredMaintaining control and leadership in the kitchen during service times in allocated sectionsMaintain professional relationships with external suppliesPrepare and cook menu as per cooking guidelines and set standards work in conjunction with the head chef to develop and implement menus ensure all staff following safety proceduresWhat are we looking for?Cert 3 or 4 commercial cookers or equivalentFood handlers (optional)Full working rights in AustraliaExperience working in a pub/bistro environment is highly desirable Well versed in all kitchen areas with hands-on experienceExperience with kitchen operations and functions and ability to cook a broad range of food itemsAbility to work as part of a teamAbility to work in a high-stress environmentAbility to follow and give direction when requiredCOVID-19 Double Vaccination Status RequiredPegasus Leisure Group values and embraces diversity and inclusion and we encourage all applicants to apply.
